SHEERA

SHEERA

Preparation Time: 20 mins
Serves: 2
Ingredients:
  • 1 cup Rava
  • 1 cup hot water
  • 4 tbsp ghee (butter)
  • 1 cup Sugar
  • 3-4 cloves
  • 2 bananas sliced
  • ½ banana crushed
  • 1 tsp cardamom powder
  • 4 cashew nuts
  • 4 almonds 
  • 4 raisins for garnishing

Method:
1. Take 2 tbsp ghee in a pan; add cloves and rava to it. Fry the rava till it turns reddish brown.
2. Add hot water and let it suck completely.
3. Then add sugar to it. Allow it to cook for 3-4 mins.
4. Add ½ banana crushed to above mixture and mix it well. Cook for 2-3 mins.
5. Now add 1 tbsp of ghee and cardamom powder and cook for 2mins.
6. Add banana slices in it.
7. Cook only for 1 min on low flame.
8. While serving garnish it with cashew nuts, almonds and raisins. 

Decorate it with remaining banana slices :-)

MALPUA

MALPUA 

Women's Day Special - Delicious MALPUA Recipe!

Ingredients:
 
For the MALPUA:
500 gms all-purpose flour
2 cloves
2 pepper
2 smashed bananas
1 cup milk
Slivered almonds and pistachios to garnish
Ghee

For the SUGAR SYRUP:

1 cup sugar
1 cup water
Saffron strands
1/2 tsp cardamom powder


Method:

1. Mix equal quantity of sugar and water in a thick bottomed pan and boil it until a single-thread consistency is obtained.
2. Boil to reduce it to half of its original volume. Stir frequently.
3. Remove it from the fire.
4. Add cardamom powder, saffron threads, mix well.
5. Keep it aside to use later.
6. Take a bowl and mix milk, flour, clove, pepper, smashed bananas together to form a smooth batter.
7. Heat ghee in a deep frying pan to cook the MALPUAS.
8. Pour the batter into the oil to form small circles about 4" in diameter.
9. Cook till golden brown.
10. Remove from the oil and put directly into the sugar syrup.
11. Remove after 2-3 minutes.
12. While serving garnish it with silvered nuts.

Tips:
  • Serve hot as then you can feel the aroma of banana.
  • You can also serve it pouring 1 spoon rabdi over them.































Palak Methi Tikki

Here is a quick & healthy recipe for Palak Methi Tikki’s. Try It!
 
Ingredients:

·                     Finely chopped small bunch Methi (Fenugreek)
·                     Finely chopped small bunch Palak (Spinach )
·                     1 tsp chili powder
·                     ¼  tsp turmeric powder
·                     ¼  of Ajwain
·                     Finely chopped Coriander leaves
·                     ½ tsp sesame seeds
·                     1 bowl cooked rice
·                     1 bowl of bread crumbs
·                     2 tbsp oil
·                     Salt to taste

 Method:
 1.       Grind finely chopped palak, methi and rice in a mixy.
2.       Take the above mixture in a bowl add salt, sesame, ajwain, chili powder, turmeric powder, chopped coriander. Mix well
3.        Divide the mixture into equal portions. Grease your palms, take small portions of the mixture and shape them into tikkis.
4.       Heat a pan and add sufficient oil. Place the tikkis on the hot pan and shallow fry.
5.       When the underside is done, flip over and cook till the other side is done. Do not flip the tikkis too often as they are very delicate and may break.


 6.       Serve hot :-))

Pudachi Vadi or Sambhar Vadi

Pudachi Vadi or Sambhar Vadi
Ingredients:
·         ½ bowl coarsely ground cashew-nut
·         2 cup chopped coriander leaves
·         1 tbsp poppy seeds
·         1/2 cup grated dry coconut
·         1 tsp red chili powder
·         1/2 tsp turmeric powder
·         1 tsp lemon juice or amchur powder and chaat masala
·         1 tsp sugar
·         salt  to taste
·         1 tsp cumin & mustard seeds
·         1 tsp coriander powder (Dhana powder)
·         2 tsp maida or wheat flour
·         1 bowl besan
·         pinch of asafetida
·         pinch of baking powder
·         1 tsp ginger, garlic and chili paste
·         oil to fry
·         1 tsp Garam Msala
·         ¼ bowl raisins
·         4 tsp oil

Method:
1.      Heat a pan with oil, let the cumin & mustard seeds splutter. Add ginger, garlic and green chili paste & asafetida.
2.      Add salt, turmeric, chili powder & coriander powder in it. Mix well.
3.      Now add dry grated coconut. Fry till it’s crunchy.
4.       Add poppy seeds. Mix well.
5.      Add amchur powder, chaat masala and sugar. Mix well.
6.      Remove from the fire and add cashew nut powder. Mix well and keep it aside.
7.      Take chopped coriander in 1 bow. Add chili, garlic and ginger paste. Add salt. Mix well
8.      Take another bowl and mix beasn, maida or wheat flour, 2 tsp hot oil (Mohan), turmeric powder, chili powder, pinch of salt & baking powder.  Make dough of it by adding water.
9.      Make 10-12 pieces of the dough, roll each piece in oval shape, spread spoonful mixture on it, & make a roll of it. Repeat the same procedure for remaining balls.
10.  Dip fry all vadi until become golden brown.
11.  Serve it with tamarind sauce or schezwan chutney & fried, salted green chilies. J


Bread Pockets (Western-Indian flat bread)

Bread Pockets 
(Western-Indian flat bread usually made with Jowar (sorghum), Bajra (Pearl millet), Rice or Ragi.)

Ingredients:
For making Jowar Bhakri (Indian flat Bread)
  • 4 tablespoons jowar flour
  • 1 tablespoon rice flour
  • 3/4 cup boiling water
  • salt
  • rice flour for dusting
  • a bowl of cold water
For preparing stuffing mixture:
  • Grated Cabbage - 1 bowl
  • Grated Carrot- 1 bowl
  • chopped onion - 1/2 bowl
  • chopped coriander
  • chopped capsicum- 1/2 bowl
  • chopped paneer- 1 bowl
  • grated cheese- 1 bowl
  • chili powder- 1 &1/2 tsp
  • salt to taste
  • turmeric powder- 1/2 tsp
  • ginger, garlic and green chili paste- 1 tsp
  • oil- 1 tbsp
  • cumin seeds - 1/2  tsp

Method:
For preparing Indian flat bread (Bhakri):
  1. Mix the flour and salt in a glass bowl.
  2. Bring the water to a rolling boil (very important, if not hot enough, bhakri will crack).
  3. Add the boiling water to the flour mixture and mix with a spoon.
  4. Mix well, once a little warm, knead a little with hand.
  5. Divide into four portions and make round balls.
  6. Heat pan/ tawa.
  7. Dust the rolling board heavily with rice flour.
  8. Place one ball of dough and gently start patting it to make it flat.
  9. Move the flattened bhakri in a clock-wise motion as you pat it.
  10. Start from the ends and work towards the center
  11. Once the bhakri is uniformly as thin as you can make it, lift it gently and place it in both your palms.
  12. Flip it and place it gently on the hot pan (now the side dusted with the rice flour is facing up)
  13. Immediately coat the side facing up with cold water. This will also seal all the cracks. Make sure the entire surface is covered including the edges.
  14. When this layer of water starts steaming, flip the bhakri with the help of a spatula
  15. Keep checking the bhakri, brown spots will appear on the wet side which is now touching the hot surface.
  16. Once this side looks cooked and has golden-brown spots, remove the bhakri and flip it and place it on direct flame (the dry side is on the flame)
  17. Move the bhakri over the flame with tongs till it puffs up completely.
  18. Remove from flame.

19. Cut it in to half. To make a pocket.
For preparing the mixture:

  1. Take a pan. Add oil to it. Add cumin seeds and wait till it pops.
  2. Add garlic, ginger and green chili paste. Add turmeric powder.
  3. Add onion to it and cook till its light brown.
  4. Now add all vegetables (cabbage, carrot, capsicum, coriander). Cook well.
  5. Add cheese and paneer. Also add red chili powder and salt. Saute for 2 mins. Mix well.

For preparing the Bread Pockets):

  1. Open the pockets and fill the mixture as shown in the photo.
  2. Serve hot.


Tip you could also try 2 tbsp jowar +2 tbsp ragi flour in summer and 2 tbsp jowar +2 tbsp bajra flour in winter

Vegetable Sandwich!

Quick Vegetable Sandwich
Ingredients:
  • Bread slices (I have used multi grained bread)
  • Green Capsicum (chopped) - 1 bowl
  • Tomato (Chopped) - 1 bowl
  • Onion (chopped) - 1/2 bowl
  • Rava (Semolina) - 1/2 bowl
  • Curd- 1 bowl
  • Chili flakes- 1 tsp
  • Oregano to taste
  • Grated Cheese - 1 bowl
  • Butter
  • salt to taste
Method: 

1. Take 1 bowl. Add curd, chili flakes, salt, oregano and cheese.  Mix well.
2. Add chopped capsicum, onion and tomato to it. Mix well.
3. Add Rava (Semolina) to it. Mix well and make a paste.
4. Take a bread slice. Apply butter on both sides. 
5. Apply the above mixed paste on 1 side of the bread.
6. Take a pan. Heat it. Add butter to the pan. Put the bread in the pan with paste side downwards.

7. Toast both the sides.


Tip: You can use vegetables of your choice like paneer, carrot, corn, cabbage etc..
