Paneer Capsicum Rings



Monsoon Special Recipes

Can be prepared as starter when you have guest coming.

Ingredients:


  • 200gm Paneer

  • 3 Capsicums (medium size)

  • 2 tbsp corn flour

  • 2 tbsp gram flour (besan)

  • ½ tsp garam masala

  • Ginger+ garlic+ chili paste

  • 1 tsp red chili powder

  • ¼ tsp turmeric powder

  • ½ tsp sugar

  • 1 tsp lemon juice

  • 2 tbsp oil

  • Salt to taste

Method:


  1. Grate the paneer in one bowl.

  2. Add to it ginger garlic chili paste, salt, garam masala, sugar and lemon juice. Mix well.

  3. Take a capsicum and cut it from stem side to make it hallow. Clean it from inside. Remove the seeds.

  4. Stuff the above mixture in it.

  5. Roll the open end of stuffed capsicum in corn flour.

  6. Take another bowl add besan, chili powder, turmeric and salt. Mix it well.

  7. Cut the stuffed capsicum in to rings.

  8. Roll the capsicum in the above mixture.

  9. Take pan pour 1 tbsp oil and shallow fry the paneer capsicum rings.

  10. Serve hot :-))

Strawberry Cake

Strawberry Cake!











Ingredients:

· 250 gms vanilla cake mix (eggless)

· 2 cup water

· ½ tsp veg gel

2 tbsp refined oil

· 1 tsp strawberry essence

· 1 tbsp strawberry syrup

· Frozen Cherry tin

· Strawberry emulsion

· 1 cup cream.

Method:

1. Grease the cake pot with refined oil

2. Take a bowl and add vanilla cake mix, ½ cup water, strawberry essence and veg gel. Mix well.3. Whisk the above mixture 2-3 mins.

4. Add 2 tbsp refined oil to above mixture and whisk well.

5. Pour the mixture in grease cake pot.

6. Make a whole in between the mixture.

7. Set the microwave on high and bake it for 4 mins.
8. Once baked remove the cake in plate. 9. Allow the baked cake to cool. 10. Cut the cake in to 2 slices.
11. Mix strawberry syrup and 1 cup water.

12. Apply the mixture on 2 slices of the cake

13. Take cream and add strawberry emulsion (4-5 drops). Whisk it well together.
14. Apply the cream on the 2 slices of the cake. 15. Put the cut cherries or fresh strawberries on one slice of the cake.
16. Keep the other cake slice on it.

17. Arrange ½ cut cherries or fresh strawberries on it to decorate the cake.

18. Keep the cake in fridge for 4-5 hours to marinate.

Tip: You can use your favorite fruits and syrups to make different cakes from above recipe.

Vat Pournima


Vat Pournima is the festival for Maharashtrian women, which is celebrated in the month of Jesht (May-June). Women observe a fast and tie threads around a banyan tree and pray for the same husband in every birth.


On occasion of Vat Pournima I am posting one very healthy recipe “Banana Rice Flakes Delight” Which is really good for people who are dieting, kids and also for the ones who are thinking for some new recipe for the breakfast. It’s very simple and quick to make.
Ingredients:



  • 1 cup- Rice flakes

  • 2 – Bananas

  • 1 tbsp- groundnuts

  • 1 cup- chopped cucumber

  • 1 cup- curd

  • 3-4 chopped green chilies

  • 1 tsp sugar

  • 2 tbsp shredded coconut (optional)

  • Salt for taste

Method:
1. Take a medium size bowl and add all the ingredients.
2. Mix well and serve.
Tip:



  • You can add pomegranate to it to make it more colorful.

  • Also you can add chopped apple , sweet lemon or any other fruit which you like to make it rich in nutrition’s.

Importance of Vat Pournima


The celebration derived from the story of Savitri and Satyavan. It has been foretold that Satyavan won't live long. Resting on the lap of Savitri, Satyavan was waiting for death under a banyan tree, when the day of death comes. The messenger of Yama, the God of death came to take Satyavan. But Savitri refused to give her beloved husband. Messenger after messenger tried to take Satyavan away, but in vain. Finally, Yama himself appeared in front of Savitri and insisted to give her husband. Since, she was still adamant, he offered her a boon. She asked for the well being of her in-laws. He granted it to her. She then followed him as he took Satyavan's body away. He offered her another boon. She now asked for the well being of her parents. This boon, too, was granted. But she was relentless, and continued to follow him. As they approached Yama's abode, he offered her a final boon. She asked for a son. He granted it. She then asked him how it would be possible for her to beget sons without her husband. Yama was trapped and had to return her husband. So, married women pray to the banyan tree for the long life of their husbands and children. Their fast is observed the whole night till the next morning.

Chaitra month or Chaitra Mahina or Chaitra Maas is the first month in Marathi calendar or Marathi Panchang. Chaitra month falls in March – April as per Gregorian calendar. Chaitra month marks the onset of spring. In Chaitra Month many people do Haldi Kunku and prepare Raw Mango Dal (Karichi Dal) and Raw Mango Juice (Panhe) for that Chaitra Haldi Kunku. We used to have Chitra Gauriche Haldi kuku at my mom's place. We use to invite the women and young girls from our neighborhood for the function. My mom use to give everyone Karichi dal and Karicha Panha. Here is the recipe to prepare Raw Mango Dal( Karichi Dal) and Raw Mango Juice (Kariche Panhe)

Nutri Masala Dosa!!

NUTRI MASALA DOSA!

on Occasion of Gudi Padwa
Gudi is raised on the Maharashtrian New Year Day. Raising the Gudi early morning of Gudi Padwa marks the beginning of the Marathi New Year. It is celebrated on the first day of Chaitra month in the lunar calendar followed in Maharashtra.

Here’s is something different and Nutritious to try out on occasion of Gudi Padwa a


“Nutri Masala Dosa”.


For Dosa Mix:




  • 1/2 cup urad dal


  • 1/2 cup tuvar dal


  • 1/2 cup chana dal


  • 4 cups rice


  • salt to taste.

For the Chutney:




  • 2 cups fresh grated coconut


  • 3/4 cup chopped green chillies


  • 1 cup roasted bengal gram (daala)


  • 8-10 curry leaves


  • Ginger


  • salt.

For the Masala:




  • 3 medium size boiled and slightly mashed potatoes


  • ½ cup chopped onions


  • ½ cup grated carrot


  • ½ cup grated beetroot


  • ½ cup finely chopped cabbage


  • 1/2 Cup finely chopped green capsicum


  • 1 tsp green chili paste


  • 1 tsp pav bhaji masala or red chili powder or red chili flakes


  • 2 tbsp oil (you can use olive oil also)


  • 1 tsp mustard seeds


  • 1 pinch asafetida


  • 1 tsp ginger garlic paste


  • 4-5 curry leaves


  • salt to taste


  • 1 tsp turmeric powder


  • chopped coriander


  • 1 cup grated cheese


  • Butter

Method For the Dosa Mix:




  1. Soak the rice for 8-10 hrs.


  2. Combine & soak the dal for about 2 hrs.


  3. Grind the dal in a blender adding enough water to make a smooth mixture. Follow the same for the rice.


  4. Mix in the salt and set aside the mixture in a warm place.


  5. Allow to rise for 16-18 hrs.

For the Chutney:


1. Grind the coconut, chillies, curry leaves, ginger and daala in a blender.


2. Add enough water to form a smooth consistency. Add salt and mix well.


Method for preparing Masala:


Spicy Potato Vegetable:


1. Heat oil in a pan add mustard seeds when it starts popping add onion to it. Cook it till it turn slightly red.


2. Add turmeric, ginger garlic paste, curry leaves, chili paste and salt. Mix well.


3. Add mashed potato to it and sauté it for 3 mins.


Masala Mixture:


Take a bowl and mix grated carrot, beetroot, cabbage, green capsicum, coriander, chili flakes or pav bhaji masala, salt and toss it well.


Method for making Nutri Masala Dosa:


1. Spread dosa with the prepared batter.


2. Apply butter over the whole dosa.


3. Then spread the chutney over the dosa.


4. Take 1 tsp of spicy potato vegetable and 1tsp of Masala mixture and spread on dosa.


5. Add grated cheese over it. Spread it well all over the dosa.


6. Fold dosa and cut it in to 3 parts.


7. Serve hot with coconut Chutney

Puran Poli

HOLI SPECIAL ~ Puran Poli!!

One of the major festivals of India, Holi is celebrated with enthusiasm and gaiety on the full moon day in the month of Phalgun which is the month of .Any Indian festival is incomplete without grand feast and scrumptious recipes. As Holi is one of the most popular festivals in the country, Holi is also celebrated along with several interesting delicacies. Though the traditional recipes vary from family to family and place to place, one thing that remains the same is the zeal with which these delicacies are prepared for this occasion. Sweets are the vital element of Holi celebrations in any part of India. In fact, the festival of Holi is renowned for the umpteen varieties of sweets prepared on the occasion.There are some universal sweets and dishes that are prepared throughout the length and the breadth in the country on this occasion. One of the most popular desserts of Holi is 'Puran Poli and Gujhia', which is a must for every Indian home during the season. If you are looking for these traditional Holi items, you need not go anywhere else. Anjali’s Kitchen have given the recipe of several traditional Holi special dishes. Hope you enjoy eating them as well as serving them on the festival of Holi.
Puran Poli Recipe



Ingredients:
For the filling:
  • 1 cup chana dal, soaked in water for 4 hours.
  • 1 cup sugar
  • Few saffron strands
  • 1/2 tsp cardamom
  • 1/4 tsp nutmeg powder
  • 2tbsp ghee
For the dough:
  • 2 cups whole wheat flour
  • 2 tbsp oil
For the serving:
  • Ghee

For the filling:
1. Wash and pressure cook the dal in 1 1/2 cups of water.
2. Drain any excess water and keep aside.
3. Heat the ghee in a pan, add the dal and sugar and cook till the mixture thickens, stirring continuously.
4. Dissolve the saffron in a little water by rubbing.
5. Add the cardamom and nutmeg powders, saffron liquid and mix well.
6. Cool, divide into 12 to 15 portions and keep aside.
For the dough:
1. Combine the flour and oil and knead into a soft dough using water.
2. Divide into 12 to 15 portions and keep aside.
Method:
1. Roll out one portion of the dough into the size of the palm.
2. Place a portion of the filling mixture and fold the edges of the dough over the filling.
3. Pinch the edges together to seal the filling in.
4. Flatten the dough and roll again into 4" inches circle.
5. Cook on a tava over a medium flame till golden brown in color on both sides.
6. Repeat for the remaining dough and filling.
7. Smear with ghee and serve hot.
