Coconut & Rose Petals Barfi ( Naral Gulab Burfi)

Happy Rakhi Pournima to all members!

Today on occasion of Rakhi Pournima I have made this special Coconut + Rose petals Barfi.

RECIPE:1. Add coconut, ghee, milk, saffron, lots of edible rose petals and sugar in a thick bottom pan and cook it on medium heat. Stir it continuously.

2. Stir it till you smell the aroma of rose petals and mixture is slightly dry from the sides. The consistency is important. Remove from fire.
3. Add cardamom powder. Mix well.
4. Apply ghee to a plate and pour the coconut+rose fudge in to a plate greased with little ghee and pat it evenly. Garnish it with grated almonds.
5. While it’s still hot, cut into square shaped pieces but do not remove from plate. Garnish with cashew. Allow it to cool and set.

6. It will come out unstuck from the plate easily when cooled down.

Dalia or Broken Wheat Upma


Method:
  1. Dry roast the dalia in a pan on slow flame for 3 minutes till it turns to light brown in colour. Remove from the flame and keep aside.
  2. Heat the oil in a pressure cooker, add the asafetida,  mustard seeds, cumin seeds, turmeric powder, green chillies and ginger, mix well and saute for 2 minutes.
  3. Add the green peas and carrots, mix well and cook for 3 minutes.
  4. Add the roasted dalia, mix well and saute for 2 minutes.
  5. Add 2 cups of water and salt, mix well and pressure cook for two whistles or till done.
  6. Remove from the flame, open the lid, add the lemon juice and mix gently.
  7. Serve hot garnished with coriander and grated coconut.

Stir Fry mix vegetables with Chipotle and chili oregano dressing



Heat a pan, add 1/2 tsp olive oil, ginger paste, zucchini, purple cabbage, cauliflower, basil, celery, onion, Tomato, french beans, green peas, spring onion, garlic chives, spinach, cabbage, chipotle and chilli Oregano dressing, salt, lemon juice. Stir Fry. Mix well and serve hot! 
Sides: Apricots, pomegranate, soaked badam

Heat a pan, add olive oil, pepper, chaat masala, zucchini, red bell pepper, yellow bell pepper, sweet corn, soaked groundnut, tofu, basil, harbara, chickpeas, pomegranate, boiled cauliflower, salt and lemon juice. Mix well! 

Sides: strawberry🍓 and apple

Heat a pan, add olive oil, ginger garlic chili paste  salt, chawli (black eyed beans) , chickpeas, soaked raisins, lemon juice, pepper and salt. Mix well!
Add chopped cucumber 🥒  and tomato 🍅

Sides: pistachio and pomegranate

Cereals & Veggies Mix Salad 🥗 Combination 6

Heat a pan, add olive oil, mustard seeds, cumin seeds, sesame seeds, curry leaves, grated ginger, red dried chili 🌶  salt, pepper, chaat masala, lemon juice, soaked and steamed chickpeas, groundnuts, red rajma, broccoli 🥦 . Mix well! 
Add freshly grated coconut, chopped cucumber🥒   and coriander. 
Sides: black grapes and apple

Heat a pan, add olive oil, pepper, lemon juice, salt, tofu, sprouted matki, basil, red bell pepper, yellow bell pepper, onion, celery, coriander.
Mix well!
Add chopped cucumber 🥒 and tomato 🍅

Sides: guava, godambi
